How in-depth (read:expensive) do you want to go? I bought Mastering Photoshop on a CD and am really happy with it. You can pick those up on eBay (and probably elsewhere) for $9.95. Otherwise, there are training videos that come in series and sell for $100 - $300.

Adobe's Classroom in a book , which you can find any any good bookstore (try ebay & half.com too) are a fantastic resource for learning. You can also download all classroom in a book lessons for free as pdf files at adobe's homepage. That way it's even closer to what you wanted, a cd-rom, than it would be in its book form!
